Fruit, cream and crunch layers
The combination of fruit and cream topped with a crunch is the basis of literally hundreds of different desserts.
The type of fruit you use will depend on the season. In summer, you can use strawberries, raspberries and gooseberries to produce fresh and fruity dishes. In winter, stewed rhubarb or apples will provide a smooth fruit layer.
Whipped cream or ice cream are the most popular creamy additions to a dessert. But you can choose mascarpone or ricotta cheeses or Greek yoghurt with honey.
You can use a cheesecake mix with different combinations of fruit on a biscuit base for the crunch. Crushed biscuits, nuts, cake or brownies will all add texture, or you could opt for a crunchy meringue or honeycomb layer.
The crunch could form the dessert base at the bottom of the glass or add a crisp topping.
Shot glass treats
Shot glasses are perfect for serving high calories desserts. They provide an after-dinner treat without having to worry about portion size.
You can create a colourful and tempting display by offering different desserts in shot glasses. Simply prepare the usual elements of the dessert, then build into layers.
For instance, strawberry fool can be made with mashed strawberries and whipped cream in layers topped with crushed nuts. Raspberry and chocolate pudding can be formed with layers of raspberry jam, chocolate pudding and topped with crumbled chocolate cookies.
If you’re feeling adventurous, you can make mini tiramisu by using the shot glass to cut out small circles of cake. The crumbled edges of the cake left behind can be used as the topping. Just soak the cake in rum and combine it with thick layers of cream.
Ice cream sundaes
The traditional ice cream sundae is still a favourite with children and adults. Two or three scoops of ice cream at the bottom of the sundae glass form the base. Vanilla, chocolate, and strawberry make a good colour combination.
Next, drizzle on the sauce of your choice. Classic options are strawberry or caramel sauce, but you can use whatever you enjoy. Then go wild with the toppings.
For plenty of colour, sprinkle hundreds and thousands onto a squirt of whipped cream to provide a fun topping. Alternatively, you could use marshmallows, nuts, or brightly coloured candies.
Tumblers of chocolate
If you’re short on time and want to whip up something simple, then a tumbler full of chocolate always goes down a treat.
All you have to do is to make or buy chocolate mousse and scoop it into tumbler glasses. Add a squirt or quenelle of whipped cream on top. Grate dark chocolate over the cream as a garnish.
